I hope this is healthy enough for here... at least it is very good! and it uses up the many zucchini from your garden!
1/2 cup margarine
1/2 cup canola oil
1 1/2 cups white sugar
2 eggs
1 tsp vanilla
2 cups grated zucchini (other types of summer squash also work)
1/2 cup buttermilk
2 1/2 cup flour
1/4 cup + 1 tsp cocoa
1 tsp salt
1 tsp baking soda
3/4 cup each chocolate chips and nuts
- Preheat oven to 325 and grease 9x13 pan.
- Cream butter sugar and eggs.
- Add oil and vanilla, mix.
- Add zucchini, mix.
- Sift dry ingredients and add, alternating with buttermilk.
- Put batter in pan and sprinkle with nuts and chocolate chips.
- Bake for 1 hour.
- Enjoy!
Perhaps subbing applesauce for all or a significant part of the oil/margrine, and subbing Splenda for baking for all or part of the sugar, low fat or FF buttermilk (is there such a thing?), and 1/2 cup mini choc chips on top.
If I had zucchini, I'd try it but I'd probably eat the whole pan, in any event.
