Oven Fried Eggplant Slices

135 great reviews on Recipezaar can't be all wrong.  I'm making this tonight.

1/2 cup low fat mayo
1 T minced onion
1 lb unpeeled (I'll probably peel it) eggplant, sliced into about 12 (1/2 in) slices
1/3 cup fine dry breadcrumbs
1/3 cup grated Parmesan Cheese
1/2 tsp dried Italian seasoning
Cooking spray

1.  Combine first 2 ingredients, stir well
2. Spread evenly over both sides of the eggplant slices
3.  Combine breadcrumbs cheese, and italian seasoning in a shallow bowl, dredge slices in breadcrumbs
4.  Place on baking sheet sprayed with cooking spray
5.  Bake at 425 for 12 min
6.  Turn eggplant over; back an additional 12 min or until golden. (some people had to broil it for a minute at the end)

Serves 4 (3 slices per serving)

do you use plain breadcrumbs when a recipe calls for breadcrumbs...  or is it up to the chef???

I use whatever I have on hand.  I usually use the dry Italian seasoned breadcrumbs in most recipes that call for breading something.

I have 2 big fat eggplants just waiting to be used.

I think I will make this instead of the eggplant enchiladas that I had planned on making (alot less work).

Hmmm....Well, my husband ADORED this, and ate the vast majority and is begging me to make it at least once a week (every time I find a recipe he loves, somehow we never have it again.)

I thought it was a tad bland.  Next time, I might use low fat ranch dressing instead of the mayo.  It just needed a little something.
I even added some crushed red pepper to the breading because I suspected it would need a little zip, but it was still a bit bland.

However, it was crispy and brown on the outside, and soft and creamy on the inside--perfectly cooked.  It would have been easy to put some spaghetti sauce on the top after cooking, sprinkle with shredded mozzarella cheese, and broil it for a minute or two for a quick and healthy Eggplant Parm.

We visited friends in Israel last year and until I had eggplant the following way I never thought I liked it. Here goes:

Slice eggplant into just under 1/4" slices.  Cover with salt and let drain for one hour, rinse and dry.  Fry in olive oil until soft and brown.  Buy Middle Eastern Labineh or else drain some plain yogurt through cheesecloth or coffee filters until thickened.  Mix 1 cup of this with 1 minced garlic clove and 1/4 cup shredded peeled cucumber (drained).  Place a dollop of yogurt mixture on each slice of eggplant and top with toasted pine nuts.

Swampy, I love your taste in foods!  There is nothing in North America that matches the labeneh.  I am so happy there are Middle Eastern food markets where I can get it.  It isn't quite the same as yogurt cheese as seems to be a cross between yogurt and cream cheese.  Amazing on toast with jam!

ok peek...  i'm gonna grow a pair here and i'm getting an eggplant at the store today and i'm going to try this tonight!!!!  i don't have minced onion though...  i have chopped onion (a seasoning) can i use that or should i actually get minced onion?  also, did you try it again yet w/ subsituting the ranch for the mayo?  i'm gonna taste it like it is in this recipe...  but i'm gong to have your suggestion of the spaghetti sauce and cheese on the side ready in case i freak and don't like it!!!  lol

I did make it last night.  I didn't put any onion in it at all, and used the ranch dressing.  I think it was vastly improved!

But what was the best thing was after I finished cooking it, I spooned the sauce over, put a little cheese on each piece, and broiled it for a couple minutes.

PERFECTION.  I honestly wanted to go back to the store, get another eggplant, and make it again the minute we finished eating.

lol...  that's my problem...  how  to eat in moderation!!!  how many slices can you get from 1 eggplant?  dh is out of town so its just for me.  i'll let him know how it turns out b/c he wants to try it, too.

I DID IT!!!  i tried it and i loved it!!!  i made it as eggplant parmesan though...  next time i won't and see how i like it that way, too!  thanks for the recipe, peek!

I had a feeling you would like it! It tastes even better the next day, providing there are leftovers.

My hubby has a garden and this year he decided to throw in eggplant and now I have it coming out of my ears (not complaining, though.)

Yes, if you have an abundance of grasshoppers, they can invade a garden. They love the corn stalks!

dude... seriously, where i live we have the rwally big ugly ones!  amongst some other ugly critters!  maybe my dad will let me grow stuff at their house.  we used to have a couple different things growing when i was a kid so he probably wouldn't mind!

I made this on Saturday for dinner.  I had never even tried eggplant before (OK OK I am from MN...we only eat hotdishes here!!!  lol)!  It was really good.  dh liked it too!  Thanks for the recipe!

I'm going to try it tonight...I might try the lite mayo on some and then some low -fat three cheese dressing...I am excited to try it....waiting for the workers to leave though...having the kitchen redone and they are doing the finishing touches...looks beautiful!  Now I have to actually cook!  I always used the excuse that I hated my old kitchen...no excuses anymore....DRATS!

Loved the recipe!  However, portion control is not in my vocabulary!  UGH!  I ate MANY portions....I have to go back to my frozen meals for a while until I can learn the concept of portion control!
